Wild-food 
In the summer/Autumn we fish at our lake and catch a variety of fish to variate our diet.
Eels, crayfish and numerous species of fish including a 4 kilo carp.
70% of our fruit comes out of the wild.
to make into jam, syrups, wines, beers.

Nettles, are dried and added to Burger's, soups, casseroles, and makes the best beer in the world.
1kl of nettles
2 lemons
30g of cream of tarter
500g sugar
30g yeast or just a (pinch) for fresh yeast
4.5L boiling water

put the nettles, lemon rind & boiling water into a pan and boil for 15mins or so.

strain into a container and add lemon juice, sugar and cream of tarter

allow to cool then add yeast

leave in lightly covered container in a warm room for three days

stain into bottles cork down and wire and leave for one week.

Please note that beer bottles may explode so put them in a cardboard box
Blackberry's, to save on sugar we bottle all blackberries and use them in tarts which is a good way of getting anyone to eat fruit.
