Originates from the mountains of Scotland. Where only the most vigorous of animals survived to product the next, yet stronger generation. They will thrive where other breeds would perish, be it Alaska to Texas. Eating and getting fat on vegetation that other breeds will leave untouched. Highlands cope better with stress than other cattle, making them more disease resistant. There long hair helping protect them from biting insects. They are also have higher intelligence, are easily halter-trained and are even- tempered cow/bull despite there long horns. They are long lived. Highland beef meat is lean, marbled and flavorful, with little outside waste fat and are considered as beef cattle of choice
